That is a really nice set! There is a knob on top, so it will work well.
The tool with the pin and knurled nut is for replacing staffs combined with a stake, though not for beginners and you may damage the balance wheel.

I just want to rebrush some bridges of the movement, I still afraid to remove jewels from bridges
