I didn’t know that they had chronometer standard watches.

They weren't called "chronometer", but "precision wristwatch", but for all practical purposes they were, what we would call a chronometer. Vostok Precision came with timing sheets (which now are pretty rare because they were thrown away) and from factory were regulated to +5/-10 (in 4 positions at 3 temperatures across 20 day period)...
And 2809 are pretty robust movemens - even after years of soviet servicing they are usually still pretty accurate.
