Thanks friend Tafari. Congratulations on having a genuine SM 300. I have a sandwich dial I think it replicates, but being about a millimeter thick, I can't find a movement that has high pins for the hands.
Here is a photo with evidence for a possible build.

the dial and hands are looking nice. is the dial for eta2824? you can change the complete handset ( hw, cp and second pinion).

Your idea is certainly possible.
Unfortunately I don't have the skills to take apart the eta 2824 caliber and change the set you say. I don't even know where to find the set.
